Pork Fried Rice



Pork Roast part 3:



Hi Folks.

We don't have a really  good Chinese restaurant here, so I came up with this recipe so I could have the Chinese food I love. It may not be really authentic but it is pretty good.

For this  I used pork, and bacon but you can add any kind of meat, or just go all vegetable.

You will need :


4 cups cooked rice ( day old works best)
6 slices of bacon ( cooked crisp and chopped)
1 cup of green onion diced
1 cup of  diced  pork
4 Tablespoons soy sauce
6 ounces of frozen peas and carrots
salt and pepper ( to taste )
ground ginger ( to taste )
3 eggs whisked season with salt and pepper to taste
4 Tablespoons of your choice of oil
1 to 2 cloves minced garlic



Start by getting your wok or large pan really hot, add 2 Tablespoons of oil, I used bacon grease but any kind will do. add garlic , quickly add  rice and  stir for a few minutes , until rice begins to brown and hot, make a hole in the middle of the rice, large enough for the eggs, add 2 Tablespoons of oil and the eggs.

Cook the eggs for a few minutes, add pork, cook for a minute, add peas and carrots, stir, add bacon, stir, add soy sauce and ground ginger, I just sprinkle on a little of the ginger in  the soy sauce,  stir, add green onions and cook for a minute longer, or until all ingredients are hot.

Serve and enjoy.
