CHILE CON QUESO

 Hi Folks,


I really love Mexican food, or at least, our version of Mexican food here in Texas, known as Tex Mex.

Here is a easy recipe for Chile Con Queso.

Ingredients:

1 Cup Vegetable Stock ( Chicken Stock or Water can be substituted)
1/2 Can  ( 4 - 4.5 ounce ) Diced Green Chiles
1 Roma Tomato ( small dice, any tomato can be used you just need about 1/4 cup)
2 Tablespoons finely diced onion
1/2 Teaspoon Onion Powder
1/2 Teaspoon Garlic Powder
6 Slices of Processed American Cheese

Bring first six ingredients to a boil and reduce heat to a medium simmer, cook for 5 - 7 minutes, or until reduced by half.

When mixture has reduced turn down heat and add cheese slices, one at a time, letting each slice melt before adding another, till all cheese has been added.

Serve with chips.

Variations:

Add 1/4 cup of cooked ground  meat to finished queso
Instead of American cheese slices use 6 ounces of  Velveeta
Instead of green chiles add 1 Jalapeno or Serrano pepper can be used ( remove seeds and vein for a milder queso )
Add 1/2 teaspoon of chili powder or
1/2 teaspoon ground cumin

Or come up with your own

This can easily be doubled or tripled
